I'll Fly Away Not the Song - The Truth is Still Stranger than Fiction

By Michael Bresciani Three views about when the removal of believers takes place are held by most Christians throughout the world. Those who think we are taken at the beginning of the great tribulation are pre-tribulationists. Those who think the snatching away takes place in the middle of the great tribulation are the mid-trib folks. Finally there are the post tribulationists, which is self explanatory. Anyone holding one of the three views mentioned has an ample supply of proof texts to support their views. Very few proof texts are available for the post tribulation theory and it is barely supportable. Most people are on the side of the pre-tribulation rapture; unfortunately it is often for the wrong reasons. Many people view a pre-tribulation rapture as an enormous escape hatch. When the going gets rough the pretribulationists just get going, or just get gone. The fact that their views may be correct doesnt diminish the fact that it is the view most likely to leave the believer unprepared. It is human nature to take the path of least resistance but it is high folly to think it will be available right at the point when things start really getting rough. The bottom line for the unprepared is that they can only hope their views are right. But hope is a long way from preparedness. Many Christians have failed to do the math, not to mention engaging good sense. It is easy to see why this could happen considering that no one really wants to see their world torn up from the roots, and in the vast sticky quagmire of apocalyptic interpretations and speculations it is easy to get confused. As a result they have not noticed that one of the simplest ways to know when the rapture will take place is clearly provided in scripture. It is not so much when, but it is the latest point at which it could happen, and also a promise that it cant happen before a specific event. The prophet Daniel spoke of it hundreds of years before Christ. Jesus reiterated it with a few more details. Finally the book of Revelation shows it as a pivotal event in the judgment to come. Simply put the event is the abomination of desolation. When ye therefore shall see the abomination desolation, spoken of by Daniel the prophet, stand in the holy place, (whoso readeth, let him understand.) Mt 24:15 And arms shall stand on his part, and they shall pollute the sanctuary of strength, and shall take away the daily sacrifice, and they shall place the abomination that maketh desolate. Daniel 11:31 And from the time that the daily sacrifice shall be taken away, and the abomination that maketh desolate set up, there shall he a thousand two hundred amid ninety days. Daniel 12:11 The time is halfway through the last seven years in which the antichrist rules the world. The result is the pouring out of the wrath of God. Rev 16:2. Without getting bogged down in eschatological theory, semantic word games or other second coming hype here is the picture in all of its blaring simplicity. Since the wrath of God is not poured out until the antichrist does the abomination of desolation that means this is the last point we could possibly be on the earth according to the promise of I Thessalonians 1:10. Because this is true, that puts the mid-tribulationists at the top of the list of those who are most likely to have it right. This kind of interpretation comes under the heading of... if the scripture makes plain sense, seek no other sense. I always appendage my teaching on the rapture with this equally important fact, the rapture could come at any time God chooses to make it happen. All theology is subject to the ultimate sovereignty of God. The pre-tribulation theory is the most petted, preferred and defended for a reason. The reason is that believers fail to differentiate between who and what is causing the tribulation in those last days. The antichrist makes trouble for the believer, and then God makes trouble for the antichrist. We are promised that God will not pour his wrath out on his own but we are never promised that we can escape the troubles incurred at the onset of the rule of the antichrist. Rather, we are told to resist his rule which of itself implies trouble Mk 8:35. In a country where we are waiting for more of Gods unbridled blessings it is hard to teach believers that they may not only have to give something up to fight evil, but ultimately that something, may be their lives, literally. If your rapture theology includes the possibility that you may have to give up your life, you may he happy to find out that even if you held the wrong view you couldnt possibly lose anything. More importantly if you are not wrong at the very least you will be prepared. Being ready is part of Gods plan for us when it has to do with his return. In fact it is a command and an expectation that our Savior has clearly made known to all of us. Therefore be ye also ready: for in such an hour as ye think not the Son of man cometh. Marriage Advice for Men � Don't Just Say It, Show It and Mean It

Well one issue that comes up time and time again is that women often dont know if their partner loves them or not. So to all you men out there show her that you love her, dont just say it!! So many men just wait until their wives ask if they love them and then they say of course I love you, you dont need to ask. Sometimes they dont even mention the love you bit for fear of embarrassment. This is the kind of response given time and time again but at the end of the day words dont really count for very much unless you mean them and you show that you mean them. Loving someone isnt just saying I love you of of course I do at certain prompted intervals. Love is in the way you feel, in the way you treat someone, in how you act and in what you say. Love is having respect for someone, being there for them and looking forward to those special intimate moments. Love means understanding your partner, respecting their opinions and ideas and helping them with all the mindless boring chores. Love means pulling together in good times and in bad. Marriage advice for man, if you really care for your partner then now is the time to start showing it. Put your wife first and the football second!! Pay her compliments and mean them. Make her feel special. In intimate moments think of your partners pleasure as well as your own. Dont just say you are sorry, actually mean it. If you say you are going to do something, do it. If you say you are going to be somewhere, be there. Dont keep on making the same mistake over and over. Its a clear sign that you havent listened and you dont care. Find things that you can do together and both enjoy. Its all too easy to grow apart when you dont spend quality time together. Listen to what your wife has to say. Listen, understand and take action. Dont ever assume the grass is greener elsewhere. It might be different but not necessarily better!! Help with all those horrible chores around the house, especially if you are both working. If you dont like doing something then the likelihood is that your wife doesnt either. Marriage is a partnership and you need to work together as a team so that you both enjoy the same amount of free time. Understanding each other, respecting each other and striking a balance is what counts. Plan a surprise every now and then, maybe a short break, an evening out or cook a romantic dinner. Lose Weight Watch Those Portion Sizes

By Joe Mullinax New study findings suggest that controlling
portion sizes may be the fastest route to weight loss.
The research shows that the "direct route to losing weight is to
constantly control your portions," study author Dr. Everett E. Logue, of
Summa Health System in Akron, Ohio, told Reuters Health. "I am not saying exercise is not important," Logue said. If the
goal is to reduce calories, however, it's "easier to skip a brownie"
than to run four miles, he pointed out. The study evaluated 329 overweight or obese 40- to 69-year-old patients using
a model based on the idea that behavioral change involves five stages:
precontemplation, contemplation, preparation, action and maintenance. Study
participants were categorized into stages for five target behaviors: portion
control, decreasing dietary fat, increasing intake of fruits and vegetables,
increasing planned exercise and increasing physical activity. Changes in all five behaviors led to weight loss among the study
participants, but decreased portion sizes led to the greatest loss, Logue and
his colleagues report in the journal Obesity Research. For example, portion
control appeared to increase the chances of losing weight by almost four-fold,
while eating more fruits and vegetables was associated with just under a
three-fold increase in the chances of losing weight, the report indicates. By the end of the two-year study, nearly one-quarter (23 percent) of study
participants had lost five percent or more of their initial weight, and 18
percent had gained a similar amount. Those in the action and maintenance stages of behavior change for portion
control -- that is, those who began controlling their portion sizes at the start
of the study and continued to do so for the whole study period and those who had
previously begun to limit their portions and maintained this behavior during the
study -- lost nearly 38 percent of their initial weight, the report indicates. Participants who increased their intake or maintained their increased intake
of fruits and vegetables for 24 months lost about 29 percent of their initial
weight. Those who consistently restricted their consumption of dietary fat lost
35.5 percent of their initial weight. And, the report indicates, those who
participated in more planned exercise for the duration of the study lost 27
percent of their weight, while those who consistently increased their normal
level of everyday activity lost about 31 percent of their weight. Various studies point to the importance of exercise in weight management, but
"probably this (portion control) was an easier way to lose weight,"
Logue said. Considering the make-up of the study population, overweight and
obese individuals, it might have been "hard for them to start an exercise
program," he noted. Still, Logue said, "all behaviors matter." He added that in order
to lose weight, individuals must either reduce the number of calories they
consume or burn more calories, but these practices "must be done

Spring is Here - Time for Maximum Fitness

Learning About The Statue of Limitation

The Statue of Limitation is known as the time limit period that a creditor has in order to file for a federal court lawsuit to request the repay of the whole amount of debt from a debtor.
If the creditor does not file the lawsuit on the stated time, he will lose any chance of doing it at all. No collection agency will have the right to sue you for payment of an old debt. However, if a debt collector tries to force you into paying the debt by threatening to sue you, he can be penalized for violating the Fair Debt Collection Practices Act. The usual time limit of The Statue of Limitation goes from 3 to 10 years just after the moment you sign any credit contract or after the last written activity on your credit report. According to a law expert, the Statue of Limitation cases type consider in-person injury from negligence or intended wrong-doing, negligent property damage or intended wrong-doing, breach of written contract, professional malpractice, libel, slander, fraud, trespass, and some other variations. The Statue of Limitation will guarantee that a debtor cannot and will not be harassed by any collection agency and can not get sued ever again because of this same reason. The time to collect has passed, and the debtor has a chance to defend himself with new evidence. They do not have Barbie's wholesome charm, but they make up for it by hitting a number of cultural chords within the girls of today. We treat everyone with whom we interact with courtesy because we hold a value for treating others with basic kindness and respect and our value drives our behavior. We must not throw caution to the wind when it comes to honoring our values and our behavior. Here are some thoughts about common sense, courteous behaviors otherwise known as etiquette: Posting a photograph is the single most important factor for getting people to read your profile. Post a current photograph of you! Resist posting an old photo or a photo of your best friend whom you think is better looking than you. Be timely. Answer the responses and initial inquiries within three to four days. It is considered good etiquette to answer all emails since people have taken the time and effort to communicate with you. If you become overwhelmed by the interest of many men or women, simply freeze your account until you can catch up. Always be polite in you emails. Keep them fun, positive and upbeat. Creating Intimate Connections: Genuine Listening Makes All the Difference

something important, meaningful or revealing about yourself only to realize that the
person you are talking with has drifted away and is obviously somewhere else? And, if
you tell the truth, havent you done the very same thing yourself? What does it take for
us to really hear what someone else is saying to us about themselves? Genuine connections begin with deep listening. And satisfying communication requires
us to be fully present for each other and to really hear what is being offered up. For
most of us deep listening does not come naturally. In fact life experience often trains
our natural deep listening abilities right out of us. There are many ways that our ability to hear someone else becomes blocked. Once we
know about these blocks we have a much better chance of releasing them and
cultivating more satisfying habits. Here are three of common ways we undermine the
quality of communication in our relationships. Three Common Communication Blocks 1. We listen for what needs fixing, changing or figuring out. Many of us learned very
early in life to look and listen for problems. We are quick to notice what is not working
and what is wrong. We are busy analyzing and sorting for what is not right. Our
perspective distorts our listening abilities. 2. We listen for opportunities to share our own wisdom, knowledge and competence.
We are busy listening to the running commentary inside our own head while someone
else is talking to us. 3. We assume that we know what words and sentences are coming next. Often we
have moved on long before our partners sharing is complete. We have lost our
curiosity, the ability to be open with wonder about another human being. Being fully present for another is an art that can be cultivated. The following
antidotes will give you some clues about how to go about this. The Antidotes 1. See others as whole and complete right from the start. Know that everyone has a
source of internal wisdom and intelligence that they can access for their own
answers and guidance. This might feel like a big leap at first. When people are telling us their problems
we automatically assume that they want us to do something about them. But there
are many times when the greatest gift we can give another is our confidence in their
own abilities to find solutions for themselves. Granted this is not always the case
and in some situations, when advice is clearly sought and asked for there is nothing
wrong with offering help. But often we interfere when quiet listening would serve
the most. 2. Give up trying to impress others with your brilliance and be fully present for them
instead. The fact that you know things and have gifts and talents is without
question. Everybody does. If you want to create genuine connections with others,
forget about your self and get curious about them instead. 3. Be curious and approach each communication whether with someone you have
just met or someone you have been married to for thirty years, with fresh eyes of
wonder. We change and so do our friends, children and partners. When you think
you already know everything there is to know about another person the adventure
of intimacy begins to falter. You can create genuine intimate connections by looking for wholeness, focusing
fully on the other person and cultivating ongoing curiosity. Listen in this way and

Diabetes - Death by Sugar All Around the World

By Craig Ballantyne Due in part to many reasons, the whole world, on average, is getting bigger & fatter every year. At present: * More than 300 million adults worldwide are obese. * Almost half of these individuals live in developed countries and as many as 23% of American adults are obese. * Obesity results in $100 billion in healthcare costs each year in the United States. * Obesity results in 300,000 preventable deaths each year in the United States. * Obesity nearly doubles your chances of developing high blood pressure. * Nearly 70 % of cardiovascular disease cases are related to obesity! * The U.S. Surgeon General has developed a national action plan to reduce obesity. STATISTICS PROVIDED BY: The National Institute of Diabetes and Digestive and Kidney Diseases The National Institute of Health The Center for Disease Control and Prevention The Na tional Women's Health Resource Center A recent study from the journal Public Health reported obesity as being a greater health risk than smoking, drinking or poverty. Obesity was more closely associated with major illnesses and a poorer quality-of-life in comparison to people that smoked, drank, or lived in poverty. Researchers found that half of the people who are obese have an additional chronic condition such as heart disease, cancer or diabetes. This study was based on a telephone survey of 10,000 Americans and used only body mass index to assess obesity and overweight. Regardless, the results are cause for great concern. You must also keep in mind that some individuals may fit into more than one category, and sometimes even all of the categories. However, the researchers stated that more people are overweight or obese than are, collectively, daily smokers, problem drinkers or living below the poverty line. Of course, being in more than one category puts your health status at an even greater disadvantage. Obesity is a huge burden on the health care system now and will be even more so in the near future. It is a largely a preventable disease however it is a medical condition in many cases. This is very unfortunate but it is not something that should be dismissed as static. You can make a change or you can help someone make a change toward healthier living. One of the authors said the survey "demonstrates that public health officials should intensify their fight against obesity to levels that at least match the public health campaign against smoking". Sturm, R., and K. Wells. Does obesity contribute as much to morbidity as poverty or smoking? Public Health. 115(3): 229-235, 2001. Unfortunately, this is not a joke, and it's definitely no laughing matter. There are a large number of Internet resources for more information on either subject, such as www.diabetes.org and www.diabetesonestop.com. The newsletters from the American Diabetes Association have provided a wealth of knowledge (and many statistics and research facts in this article). Type 2 Diabetes (T2-D) is associated with a marked impairment in the ability of the hormone insulin to stimulate glucose uptake in skeletal muscle. Most diabetic patients are obese and have high blood levels of lipids (fats) and glucose (sugar). Both of these blood levels can contribute to insulin resistance. Correct insulin is necessary for the cells of the body to pull sugar (glucose) from the blood to use as energy. Thus, it is a negative cycle (high blood glucose leads to insulin resistance and insulin resistance leads to high blood glucose!). Over the long-term, high blood glucose levels can lead to damage of the eyes, kidneys, nerves and heart. Fortunately, while diabetes is serious, it is largely preventable and is also possible to control with lifestyle modifications, although it can't be "cured". Patients can learn to take care of their diabetes by decreasing their blood glucose levels through nutritional and exercise interventions and subsequent reductions in body fat. In fact, with weight loss, exercise, and better nutrition, many diabetics can greatly reduce (or eliminate) the need for medications. Any treatments should be discussed with a medical professional before changes are initiated. However, enough optimism, it's time to look at the hard facts and the sad state of diabetes in North American (and the rest of the world). * T2-D affects 140 million people worldwide. * 16 million Americans have diabetes. * Diabetes is the 6th leading cause of death by disease in America. * In America, the total annual cost of diabetes to the nation is more than $100 billion. * ~25% of all Medicare costs are spent on people with diabetes. * Obesity is the most important determinant of insulin resistance. * No one is able to escape the effects of diabetes (i.e. death of family and friends; financial; health care costs; etc.). The chance of death due to diabetes is increasing primarily due to cardiovascular disease. More depressing is the fact that the risk of death increases with lower socio-economic status, likely because these people are less educated, and due to the fact that you can buy loads of saturated fat and sugar for a couple of bucks just about anywhere. Cardiovascular disease sucks. Having been a spectator of an open-heart surgery at the foot of the operating table, it is clear that no one who has the choice would want to go through that ordeal. Imagine your chest ripped open, your heart fixed up, and your chest sewn up with wire. Bring on the morphine. THE CHILDREN The most disturbing issue surrounding diabetes is the impact that it is having in adolescents and in specific ethnic groups. Nowhere is it more sad or obvious as to what harm a sedentary lifestyle and a fast food nutritional intake can have on a person's health than in children. Overweight children are becoming more common, health problems are greater, and T2-D is being seen more and more at younger ages. Risk factors for overweight kids include overweight parents, high-fat diets, watching too much television, and being from poor families. Unfortunately, overweight children often simply become overweight adults. Because it is difficult for people to lose body fat as one grows older, public health experts hope that preventing excess weight gain in children will avert health problems later in life. Researchers at the Centers for Disease Control and Prevention confirmed that American adolescents are developing T2-D. However it is difficult to detect T2-D in children because rarely do they show symptoms (these take years to manifest). Thus, it is extremely important to initiate educational, nutritional, and physical activity programs as soon as possible at all socio-economic levels. ETHNIC GROUPS Overall, the number of American diabetics increased at least 33% over the 1990's and as obesity continues to increase, so will diabetes. Unfortunately, this impacts certain ethnic groups to a greater extent than others. For example, Native American Indians have a very, very high number of T2-diabetics in their communities (3 three times the national average). African Americans may have an even higher rate of diabetes (10.8% of all African Americans - 2.3 million). It is hoped that educating these peoples on nutrition and physical activity will help combat the disease. NUTRITION American's fat consumption has decreased over several decades from 40 % to 34 %, however the rate of obesity has risen from 12 % in 1991 to at least 23% today. This may be due in part to the vague "official" nutritional recommendations and the massive fast food industry. The general public believes in a low fat and high carbohydrate diet, however they don't know that there are both good and bad fats and good and bad carbohydrates. In fact, some research shows that neither the total amount of fat or carbohydrate a person consumes can predict diabetes. Researchers suggest it may not be the quantity of fat or carbohydrate that you eat, but rather the quality. Improving the quality of your food intake and monitoring the quantity will help prevent against overweight and obesity. Hu et al. (2001a) have written a tremendous paper on the role of nutrition in diabetes. They found that for carbohydrates, one should consume more low-glycemic carbohydrates and a high fiber content. In contrast, everyone should consume minimal refined flour products to prevent large increases in blood sugar and insulin after meals. Recommended carbohydrate foods are oatmeal, whole unrefined grains, fibrous vegetables, apples, and other fibrous fruits, while breads and sugar based foods (soda, candy, etc.) should be eliminated. In diabetic individuals, a diet of low-glycemic carbohydrates can improve blood sugar control and if you are obese, you should absolutely eliminate all high-glycemic carbohydrates from your diet. In fact, a meal of high-glycemic foods does not cause people to feel full, and may lead to more eating! In summary, this relationship has been established: High-glycemic carbohydrates develop obesity, and obesity develops diabetes. In their thorough review, Hu et al. (2001a) also found that a high intake of saturated fat and trans-fatty acids likely promote diabetes. In contrast, an increase in a person's intake of poly-unsaturated fat and Omega-3 fatty acids could help prevent diabetes. It is wise to decrease consumption of saturated fats (animal fats), margarine, butter and hydrogenated vegetable oils (i.e. the oil that french fries are cooked in). Salmeron et al. (2001) recommend decreasing your intake of trans-fatty acids (hydrogenated vegetable oils) by replacing them with non-hydrogenated polyunsaturated fatty acids will help decrease your risk of T2-D. One place to start is reducing your intake of fast food. In replacement, everyone should try to consume more fish oils and non-hydrogenated vegetable oils (i.e. olive oil). Most of the research presented is based on association. For example, in the Netherlands, diets containing a lot of fish are associated with lower risks of diabetes. Researchers suggest that one must follow the correct diet for a long time (i.e. make it part of your lifestyle) in order to see benefits. For example, fish oils (Omega-3 fatty acids) have benefits for "cell membranes" and help insulin function properly, however this will not happen overnight just because you had a salmon steak! Basically, a typical "Westernized" diet should be avoided. All the negatives (i.e. saturated animal fats and sugars) seem to be associated with one another (i.e. they are all found in your typical fast food meal). In reality, everyone should try to: * Decrease animal fat (saturated fats) and hydrogenated cooking oils. * Increase fish and flax oils (poly-unsaturated Omega-3 fatty acids) and vegetable oils. * Decrease high-glycemic carbohydrate intake. Don't drink regular soda! * Increase fiber from whole grains * Increase fruit and vegetable consumption At the 2001 ENDOCRINE SOCIETY meeting, alternative treatments of T2-D were recommended by Arsenis and Goettelman. In this study, diabetic patients reduced animal protein intake from 2-3 times a day to once every other day (vegetable protein was substituted) and stopped all consumption of plain sugars. Patients liked the new diet and the fact that they did not have to fast, take low calorie diets or receive appetite suppressants. The metabolic profile of many patients improved and it even helped some to stop using certain medications. The authors concluded that the reduction of animal protein and sugars help to improve the quality of life and metabolic profile of diabetic patients. LIFESTYLE In addition to diet, another contributing factor to obesity is that 60 % of Americans don't get enough activity and 25 % get NO activity. A recent study examined almost 40000 males over the age of 40 and how the amount of TV they watch relates to their T2-D risk (Hu et al., 2001a). Researchers showed that more TV was significantly associated with higher risk for diabetes and that increased physical activity is associated with less risk for diabetes. The key point is that if people get up and moving that they may be able to decrease their risk of diabetes. This information should be applied towards youths as well. In addition, for obese people, simply losing 5-10 pounds can have a dramatic positive effect on their health! Even inadequate sleep can have an effect on diabetes according to research from the lab of Dr. Eve Van Cauter. In a study, subjects that got restricted sleep (< 7h) for 5 nights had impaired insulin sensitivity (Mander et al., 2001). It may be due to disruption of bodily functions due to shortened sleep. Thus, one of the functions of sleep may be to assure normal blood sugar levels. That's another "Western world" lifestyle factor that may contribute to diabetes. On a related note, "Excessive Daytime Sleepiness" (EDS) is becoming more prevalent. This condition is associated with diabetes and is considered as an important public health problem because it is a strong risk for public safety. Its prevalence is estimated to occur in 5% to 15% of the general population. INTERVENTIONS According to the National Institute Health, 35-40 % of adult American women and 20-24 % of adult American men are trying to lose weight at any given time. An interesting story came out of Philadelphia last month. Philly was rated the fattest city in the USA for January of 2000 and the mayor urged the city to lose weight. The city has taken the challenge and this year sits at 3rd, while Houston is now the fattest in the USA. On a whole, obesity and diabetes are more prevalent in the Southern United States! In a study presented at the American Diabetes Association conference, diabetic patients have the greatest improvements in symptoms after following a program that combined a proper exercise and diet approach (Alpizar et al., 2001). Obesity remains the major obstacle to the achievement of satisfactory glycemic control in T2-D and often limits management of cardiovascular risk factors. After nutritional education and guidance, as well as an increase in daily physical activity, modest weight losses and improved diabetic factors were noted (Reynolds et al., 2001). Again, these stress the need for education and guidance. If you are active, if you eat a variety of healthy foods (natural produce, lean meats, un-refined grains), and if you are of a healthy weight, than the fear of diabetes and obesity should be minimal. When asked how to avoid diabetes, Dr. Ronald Kahn said, "Stay thin! If you are not, get thin!" After all, obesity is the most important determinant of insulin resistance. For active people of a healthy weight, it is not unrealistic to include the odd "Western" meal in your weekly schedule without causing panic. However, the consistent intake of a high-sugar, low-fiber, high-saturated fat diet, along with a daily sedentary living pattern precludes people to the awful diseases that are diabetes and obesity. Ostrich: A New Red Meat

By David Russo A New Red Meat Since the high glycogen content of Ostrich meat confers to it an almost sweet flavor, it is suggested to serve it along with a complement of vegetables that contrast nicely with sweet, such as red radicchio and rocket. Rich in proteins and iron, the meat is also low in fat (1-2g per 100g of meat). A large part of those 2g consists of polyunsaturated fatty acids (healthier) as compared with saturated fats. This makes ostrich meat ideal for the diets of babies and the elderly, pregnant and lactating women as well as athletes and people suffering from anemia. As for its flavor; it is more or less similar to high quality beef, although it is much more tender and made up of very short muscle fibers that allow for easier digestion. Choice Most ostrich meat comes from farms, many of which are located in Israel, South Africa and the US. Sold ever more commonly even in traditional butcher shops, the major obstacle to its purchase is its relatively high price. This due in large part to three factors: high mortality rates among the farm-raised birds, long growing periods (9 months to a year) and low meat yields relative to the animal's weight (35kg edible meat from a 150kg animal). Preservation This meat should be stored in the coldest part of the refrigerator soon after purchase, ideally wrapped in the appropriate polyethylene wraps or in wax paper. It should be consumed within one or two days of purchase at the most. Cuts Ostrich is a flightless bird because it has a flat breastbone that makes it unsuitable for flight. On top of making it flightless, the bird's flat breastbone means it does not have large breast or wing muscles. Therefore the meat from comes from the thigh, leg and back. Cuts are nearly exclusively from the various muscle groups found in the animal's leg, divided into the fillet, sirloin, and thigh. The last cut comes from the neck. From the fillet, cut from the less fibrous part of the animal's thigh, are cut the medallions, kebabs, carpaccios and roasts. From the sirloin; cutlets, steaks, chops and roulades. From the thigh itself; roasts and ground meat for meatballs and hamburgers, while the neck is used in boiled dishes and ossobuco. Cooking In dealing with lean meats such as that of the ostrich, especially when grilling, it is important to baste the meat with abundant extra-virgin olive-oil before cooking it in order to avoid the meat becoming hard and dry due to the quick evaporation of its juices. Another method, useful when cooking whole cuts, is to lard the meat in such a way that it keeps the meat moist. Even for the higher quality cuts, it is preferable to cook ostrich meat in the pan and for only a short period. It is also best if the meat is cooked rare and therefore should be removed from the refrigerator at least half an hour, this also allows for a shorter cooking time. In order to further avoid losing the meat's juices, it is wise not to puncture the meat with a fork but instead handle it with two spoons in a pincer movement. For the same purpose, it is a good idea to brown the ostrich roast in a pan with some butter and extra-virgin olive oil before cooking it in the oven, this creates a barrier on the outside of the meat that helps keep the juices in. Ostrich meat's extreme tenderness, comparable only to the finest veal fillet, lends itself nicely to being eaten crude and therefore should be tried in a carpaccio or tartar. David Russo, VMD, PhD

Backyard Neglect - A National Phenomenon - And What To Do About It

By Elton DeWese Aah yes, the backyard. So many events, gatherings, memories.
Do I hear the theme to the bridal march, birthday party horns,
something sizzling on the grill? So much activity went on here
over the years remembering them all would prove difficult. But
the backyard is much more than all of these things. It can
become a 'sanctuary' for you and your furry neighbors(of the four
-legged persuasion), as well as the feathered ones(two-legged
persuasion). A place to relax and get away from it all, hence the
word sanctuary in quotes. When last did you take a REALLY
GOOD LOOK at your backyard and said to yourself - "Egads!"
Just kidding... Maybe not. But seriously, have you ever seen
your backyard for what it really is or rather what it could
become? I'll bet you never once cast your wary eyes on this
most overlooked and under kept part of your domain and saw
the raw potential of all this real estate. It's my humble opinion that people, at least in this society -
Neglect Their Backyards! There, I said it. I feel better now. It's
what I've wanted to say from the very beginning. And this
phenomenon seems to transcend all cultural and monetary
boundaries, as well as other societal "classes" for lack of a
better word here. Rich or poor, young or old, blue or green,
people who like science fiction and people who don't(I harbor a
special animosity towards the last group). No one seems to be
immune. Are we all just a bunch of lazy dumb as@%#? Sorry,
I get a little passionate about things - from time to time. But
here's a good example of what I mean. Take the scene from
the movie The Godfather II. When papa Corlione is in the
garden and about to have a heart attack. Now, take a good
look around... I wonder if this garden had anything to do with
Mr. Corlione's demise. It seemed - well, sort of depressing.
The type of place you could 'die' in. By comparison the house
seemed lavish, luxurious. Fit for a king and his queen, very
well kept. You can spend just as much time, energy and money
designing and decorating this most humble part of your lair as
you would any room in the house. Think, interior decorating,
but in an exterior and outdoorsy kind of way. There are two
basic ways to go about it. 1. Pay someone to do it for you.
2. Do it yourself. This article will focus on the latter. There's no right or wrong
between the two. Different strokes for different folks. And it
doesn't have to be that time consuming or costly. It all comes
down to how much time and money 'you' want to put into it.
With thousands of items, designs, layouts and tools to choose
from to get the ball rolling, you can transform this nether region
into the 'place de rsistance' of your r&r dreams without breaking
the bank, or your back. A few points to remember in order to
make things go smoothly. 1. You should plan to do this with at least one other
person. You'll need an extra pair of eyes and hands to help
set things up like line levels, hole diggers(augers), etc.
more accurately, as well as lifting heavy items such as bags
of dirt or cement, bricks, blocks, lumber, glasses of iced
tea and so forth. You can even turn it into a family
project. Now the fun potential REALLY goes up a few notches
for everyone, including the dog! Especially the dog.
2. Plan ahead. Digital design software allows you to do
this in spades(more on these in a minute). Like anything
you do planning ahead can make the difference between a
garden that looks 'nice' or 'truly inspirational'. Take
time to carefully choose your design layout, items, budget
and 'colors'. Remember plants do come in many different
colors. My personal favorite, plaid. A little something I
put together myself with my 'Genetic Engineering For Dummies
Guide To Gene Splicing' manual and kit. I tell you it's
amazing what you can purchase on the internet these days.
Just kidding! Had you there for a moment didn't I?
3. Organize your design items carefully into groups to
better decide what goes where and what looks good next to
what. Trying to undo and reinstall items that were well
placed, especially heavy items such as fountains or benches
could add significant time, energy and possibly cost to your
project. Also, if you're a 'newbie' at this you should
start out simple. Just a few design items to get a feel for
how things will look in terms of placement and color scheme.
You can always add to it later. Just don't get carried away
and wind up with a garden that's hard to navigate because of
too many items strewn all over the place. Few things hurt a
garden more than 'garden clutter'. It ranks right up there
with dead plants and too much shade. There are many tools on the internet too numerous to list here
that can literally shave days if not weeks off your project time
and save you quite a bit of money in the process. The most
efficient time savers are digital design software. They're
extremely sophisticated and won't cost you a whole lot. The
really decent ones cost anywhere from $30 to $100. Best
bargains I've seen are on eBay and Amazon. The software
literally shows you what your grounds will look like when the
project is finished. This really helps in 3 major ways. 1. It saves you the cost of hiring a designer or landscape
artist.
2. It saves you the time and frustration of learning from trial
and error, which can become quite costly.
3. No surprises, which can also be quite costly. By being
able to see the finished project right on your monitor you'll
know what works and what doesn't. The image quality is
fantastic. Some have actual photos that are incorporated into
the software and others allow you to import your own. This
aspect of the project has more potential than any other to be
the most fun. Manipulating background photos, diagrams and entire layouts
and seeing them transform and take shape right on your
computer screen in 3-D imaging is pretty fascinating stuff.
Some of the more sophisticated software are actually easier
to use because of all the animation built into them. And as a
result will make you feel like a real pro or at least quite pleased
with yourself for putting together such a professional looking
design. Okay, here endeth' my plug for digital landscape design
software. The goal is to transform this Alice In Wonderland
into a... into a... well, into something it never really was before
but had the potential to be(whew). 'Exactly' what that is, I
wouldn't presume to know 'exactly'. But speaking in a general
sense, if your house is your castle then the space behind your
house should be - an 'oasis' behind the castle. A private resort
of sorts. A place that inspires you to relax and mellow out. This
is where personal taste comes in which is why I can't say exactly
what this oasis should look like. But again speaking generally it
should definitely inspire. Or else what would be the point. So, I believe I've made MY point. I've told you what the
problem is and gave you a solution, sort of. My solution
may seem a bit vague. It's lacking details on specific
techniques and items to correct this MAJOR societal flaw of
ours. To give you all these details would mean another
article all together. Check back here periodically, I'll be
putting together a follow up article on design techniques and
items you can use to help sculpt your 'perfect' backyard
garden and help bring your dream to fruition. Here's a tip.
Bird houses, benches and fountains would make excellent
items to start with. There are many others of course but I
chose these three because in my humble opinion I believe
them to be the cornerstones of any well thought out
backyard/landscaping design project. Another thing I would like to mention, so I will. A well
kept backyard especially a landscaped one WILL increase
the value of your property. The money you put into this
project will at least double when added to your total
property value, which opens up some pretty nice financial
portfolio options you'll most likely want to bring to the
attention of your financial advisor. You'll have a sense of great
satisfaction after completing your garden/landscaping project.
The knowledge gained from such a project is invaluable and
will come in handy again somewhere up the road. Now if
